Color and Shape: Bright golden-yellow (tunaca) color, with almost white internal flesh. The shape is typically globe-shaped to slightly flattened (depending on the specific variety).
Flavor (distinguishing feature): Extremely sweet and mellow. This is due to its low sulfur content and higher water and residual sugar content compared to traditional onions (which have a more pungent flavor).
Culinary Use: Its sweetness and low pungency make it ideal for eating raw in salads and sandwiches, as well as for grilling or caramelizing, where the natural sugars are enhanced.
Size (Caliber): Tends to have large bulbs, often labeled Jumbo (80 mm – 100 mm) or Colossal (100 mm).
